You’ve probably heard of the Instant Pot ¯\_(ツ)_/¯

But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!

This week I wanted recipes that were fast, simple and delicious. All three dinners fit this description! I hope you’ll give these a try!

Air Fryer Parmesan Crusted Cod
(No exact measurements here, sorry)

Cod fillets
all purpose flour (enough to lightly coat each fillet)
salt and pepper
1 egg, beaten
1/2 cup (or so) Panko bread crumbs
1/2 cup (or so) grated Parmesan cheese
1-2 Tbsp aged Bay Seasoning
1 Tbsp-ish fresh parsley, chopped

Pat the fish dry and salt and pepper on both sides. Have three stations. 1 bowl with flour, 1 bowl with egg, and 1 bowl with bread crumbs, cheese, aged Bay, and parsley mixed. Dip each fillet into each bowl in order listed in previous sentence. Preheat air fryer to 400 degrees F for 5 minutes. Spray the bottom of the air fryer basket with oil. put the cod in a single layer into the basket. put in the air fryer at 400 degrees for about 10 minutes. Enjoy!!
