Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!

9 chicken breasts
2 limes
2 cups frozen corn
2 big garlic cloves
3 big yellow or white onions
1/2 red onion
14 oz can low sodium black beans
2 cups brown rice
8 cups any low sodium stock/broth or bouillon cubes
9 oz low sodium tomato paste
2 lbs sweet potatoes
14 oz can full fat coconut milk
4 tbsp maple syrup or honey
3 tbsp soy sauce
1 tbsp apple cider or white vinegar
2 tsp liquid smoke https://amzn.to/2HgLiBg (1 tsp smoked paprika or omit)
1 tsp cumin
1 tsp chili powder
1 tsp garlic powder
2 tbsp fish sauce
1 tbsp red chili paste
3 kaffir lime leaves (optional)


This recipe feeds 6-8 people. You can freeze leftovers or cut rice and water in half and keep same cook time.

3 big chicken breasts
Juice from 2 limes
2 cups frozen corn
2 minced garlic cloves
1/2 red onion, minced
14 oz can low sodium black beans, rinsed and drained
2 cups brown rice, rinsed and drained
1 tsp cumin
1 tsp salt
Pepper to taste
2 cups low sodium stock
1 bunch fresh cilantro, finely chopped

1. In a big resealable bag, add all ingredients except stock and cilantro. Close and swish everything around to mix.
2. Freeze for up to 3 months standing up.
3. When ready to cook run under warm water for 15 secs and add to Instant Pot with stock or water.
4. Cook from frozen for 22 mins on high pressure. do natural release.
5. Add cilantro, maybe more lime juice and stir. We served it with salsa and yogurt.
