You’ve probably heard of the
Instant Pot ¯\_(ツ)_/¯But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.
Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!

My instant pot is becoming my BFF for weeknight dinners! I find I am using it 2-3 nights a week to make my life super simple! If you don’t have an IP you can still enjoy these recipes by cooking on your stove top or even your slow cooker! Try make your rice ahead of time and adding the ingredients to your slow cooker and adding the rice in for the last 20 minutes of cooking to heat up! For the pasta, add all your ingredients and add it in to let it cook for the last 30 minutes in your crockpot to fully cook! No slow cooker!? make these recipes on your stove top! Anything is possible when you try hard and believe in yourself! 🙂
Recipe #1: Creamy Mushroom Rice
-1 packet mushroom basmati rice from @bubblegoods (see link below if you are interested in ordering!)
-2 cups rice (any type!)
-1 lb chopped mushrooms
-1 can white beans (drained and rinsed)
– can corn (drained and rinsed)
-2-3 tbls vegan bouillon
*Mix beans, corn, 1/2 cup water and bouillon in a high speed blender or a food processor until smooth
*Add all ingredients with “cream” sauce and an additional 2 cups water to your instant pot, stir well, pop on lid, seal and set to rice or 12 minutes
*Naturally release for 5 minutes
Recipe #2: Chickpea Butternut Coconut Curry Rice
-3 cups rice (any type!)
-1 can lite coconut milk
-2-3 tbl red curry paste
-1 can drained and rinsed chickpeas
-3 cups chopped butternut squash
*Add all ingredients to your instant pot with 3-4 cups of water, stir well. Pop on lid, seal and set to rice or 12 minutes
*Naturally release for 5 minutes
Recipe #3: Kale Pasta Soup
-8 oz pasta
-1 bag frozen kale
-1 can of tomatoes (I used a 12 oz can)
-2-3 tbl vegan bouillon
-1-2 cups cooked beans (any!)
-8 cups water
-1 can corn (drained and rinsed)
*Add all ingredients to your instant pot, pop on lid and seal than set to manual for 3-4 minutes. Naturally release for 5 minutes
