50 minute Christmas Pudding in Pressure Cooker Instant Pot Recipe (Ad – Gifted)

You’ve probably heard of the Instant Pot ¯\_(ツ)_/¯

But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!

Luxury Orange Christmas Pudding in under an hour in Instant Pot!

1) Grate 1 orange zest. Set orange aside
2) Mix together 210g butter and 200g dark muscovado sugar
3) Sieve in 100g self-raising flour and 1.5 tsp baking powder
4) Slowly add in and mix 3 whisked eggs
5) Add ground ginger, nutmeg, cinnamon, and cloves, plus a pinch of salt
6) Mix in 100g mixed fruit and nuts of your choice
7) Add a dram of orange liqueur.
8) Grease a dessert bowl with the extra butter from earlier.
9) Line the bowl with orange zest and 3 tsp of honey
10) Add 2-3 cups of cold water to your Instant Pot’s inner pot. put a rack inside, and sit your dessert bowl on top.
11) Manual settings, high pressure, 50 minutes.
12) In the meantime, whisk double cream with a dram of coffee and a dram of orange liqueur, until soft peaks are formed. I prefer not to add sugar as I love the bitterness of the coffee and sourness of the orange liqueur to contrast with the sweetness of the dessert, but if it’s too tart, feel free to add some icing sugar to taste before whisking. Set cream aside.
13) Once your pudding is cooked, release the steam from the release handle without putting your hand over the hot steam. Cancel the programme, and switch off the Instant Pot at the mains.
14) Use a sharp implement such as a knife, toothpick or chopstick to poke your pudding to check if it is cooked. The implement should be fairly dry.
15) Peel the orange you set aside earlier, and take apart the segments.
16) Decorate your Christmas pudding with the orange segments, with your orange coffee cream on the side. Serve and enjoy!
