You’ve probably heard of the Instant Pot ¯\_(ツ)_/¯


But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!


its a labor of love and its simple to see why its Julia Child’s (and my kid’s!) fav fall and winter stew – Beef Bourguignon sounds fancy but really is a great tasting beef stew. the key to flavortown? brown the bajeezus out of the beef… cast iron or I adore my Zwilling Deutschland enameled dutch oven – all characteristics of cast iron, super simple to clean and a lovely color to boot.

also use a decent red – the better the red wine, the tastier compounds it leaves as the alcohol cooks off. it doesnt need to be a $$$ wine, something drinkable is perfect -ask your local wine merchants ( Kensington Wine Market Willow Park Wines & Spirits Market Wines Wine and Beyond ) for inexpensive options! some folks add extra cognac or brandy for even more flavor town (1/4cup max XO or its too powerful tasting). its fab with some roasted bread, rice or even on noodles!

ingredients
-3lbs cubed beef – brisket, chuck or blade steak work well
-1/2cup chopped pancetta or bacon
-1 onion chopped
-2 carrots chopped
-2 stalks celery chopped
-2 garlic cloves minced
-1-2bay leaves
-1 tbsp dried thyme or a 6 inch sprig fresh
-3tbsp flour mixed with 1/4 cup water or butter
-1 cup pearl onions peeled
-1 cup mushrooms, halved +1tbsp butter

how to
1) season beef with salt and pepper generously (approx 1tsp salt and 1/2tsp pepper)
2) brown pancetta on medium heat in Dutch oven pot or cast iron until browned, take out and save.
3) crank up heat to med high, sear beef until super browned on all sides, save.
4) add in carrots, onions, celery, mix for a few min. add in tomato paste, garlic, thyme and bayleaf. mix.
5) add in wine and cognac/brandy if using. add in broth. add back in pancetta and beef. bring to a boil, cover and lower heat to low, simmer x1h-1.5hr until beef tender. If using IP, HPx30min, NPR.
6) make flour slurry and add to stew. sauteed pearl onions with mushrooms and butter in a pan and add to stew. cover and simmer x15min, season and enjoy!
