Beef Stew in Instant Pot

You’ve probably heard of the Instant Pot ¯\_(ツ)_/¯

But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!

Gear up for fall with this fast to put together beef stew

1.5lbs of beef cubes (Some grocery stores already have a “stew beef” already packaged, but you can use any “tough” part of beef: the shoulders (chuck) or rear (round)
1 medium onion; chopped
3 cloves of garlic; minced
2 Tbsp of Italian season (or combo your own of oregano, parsley, basil, thyme, & rosemary)
1/2 – 1lb of potatoes; cubed
1 cup of celery; chopped
1 cup of carrots; chopped
3 cups of beef broth
2 tbsp tomato paste
1/2 Tbsp Olive Oil
2 bay leaves (optional)
Salt and Pepper; to taste

1. Set Instant Pot to saute function
2. Add olive oil. Let heat. Add beef. Season w/ salt and pepper and cook until browned all over
2. Add onions and let cook until translucent. Add garlic and cook for another 30sec
4. Add in tomato paste and let cook a bit 10-15sec and then add in veggies
5. Add in broth (or water if you do not have broth on hand). Add in your bay leaves if using
6. Set IP to slow cook on high for 3-4hrs or on low for 6-8hrs
7. Remove bay leave. Taste to check seasoning if you’d love
8. If you would love your stew thicker than what is produced you can make a slurry with corn starch and water (or use the liquid from the pot love I did here). If no cornstarch you can sub for arrowroot starch or even flour to assist thicken
