Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!

Why is this THE best Instant Pot chicken thighs recipe? Because not only is it extremely simple, no-prep, and comes together in under 10 minutes – it’s a foolproof, no fail way to acquire JUICY, FALL APART, FLAVORFUL CHICKEN every time!

I’m blessed to live in Tampa Bay, and there’s a very cool put called Tarpon Springs nearby. It has one of the highest populations of Greek people (outside of Greece) IN THE WORLD 😮

That’s where I first had the delicious “Greek lemon rice”, and it’s so tasty I wanted to learn how to recreate it at home.

And I can say this recipe was an incredible success!

Not only is this a cool authentic recipe, that gets you some of the best chicken thighs from Instant Pot, but it’s also a healthy, low-calorie meal that you can easily make 400-500 calorie portions out of with 30g+ protein 💪

– 1-2lbs boneless, skinless chicken thighs; before I used 1.7lbs which made me 3 meals of 150-200g chicken.
– 1-2 cups of basmati rice; before I used 2 cups of rice and had pretty much 1 cup of rice left over after portioning out the chicken. You could use 1.5 or 1 cup if you want less leftovers – but trust me you’ll want extra rice after you taste this!
– 3 lemons; could use 2
– 2-3 cups of chicken stock; or broth of your choosing, you want a 1:1 ratio of rice to liquid, and then a little extra to account for and then a little extra to account for additional ingredients.
– 1-2 Tablespoons fat; to brown the chicken, I used olive oil
– Salt (to taste); for chicken
– Pepper (to taste); for chicken
– Garlic powder (to taste); for chicken
– Something to marinate the chicken; ziplock bag, etc.

👩‍🍳 STEP 1: Add chicken, lemons, salt + pepper + garlic powder to bag. Marinate for at least 30m, or up to 24hrs.

👩‍🍳 STEP 2: Sear chicken for 3m, flip and sear the other side for 3m. (SAVE MARINATING LIQUID BECAUSE YOU NEED THAT!)

👩‍🍳 STEP 3: Briefly fry the rice prior to cooking. (This is what makes it GREEK LEMON RICE.) Approx. 2m or until rice is opaque.

👩‍🍳 STEP 4: Pour marinade liquid over rice, add chicken thighs on top, add cooking liquid. (Note: I used 6qt IP, you may need more or less liquid depending on size. Check video for tips.)

MANUAL PRESSURE (high if you have option) = 4 MINUTES
