For chicken marination
5-6 big chicken pieces (preferably leg pieces)
Add salt , red chili powder 2 tbsp, turmeric 1/4 tbsp(very little)
Biriyani masala (any brand) 2 tbsp
Ginger Garlic paste 1 tbsp
4-5 tbsp Dahi (yogurt)
Leave for 1 hour
Soak rice for 1 hour
In boiling water
Add 1 tbsp Black cumin ( Sah-jeera)
Some pepper corns
Whole Cloves , cinnamon , cardamoms
1 star anise , some mace
Add salt to taste
Cook rice only half
For final biriyani
Fry some onions (3 pc)
Add chicken and cook at low flame ( very low) for 7 mins on each side
Cover the chicken with mint , coriander leaves , fried onions , lemon juice , green chillies
Now add rice on top
Pour a few tbsp. of ghee and saffron water and rose water
Cover and let it cook on low flame for 25 minutes
Better if you put a tawa between the flame and the pan
After 25 min it is done … enjoy
