COCA COLA CHICKEN WINGS
1 lb. (453 gm) chicken wings
3 to 4 tablespoons light soy sauce
1 to 2 tablespoons dark soy sauce
3 tablespoons cooking oil
2 tablespoons ginger
3 cloves garlic
1/2 sliced onion
1 cup coca cola
put chicken wings in a big mixing bowl. Add light soy sauce
and dark soy sauce. Marinade for at least 1/2 hour or overnight.
Pan Method:
Preheat cooking pan at medium heat. Add cooking oil. Then add ginger and garlic. Stir fry for a few seconds. Add onions and stir fry for 1 minute. Add chicken wings and sear on all sides. Add coca cola and let simmer for 15 to 20 minutes. The liquid will be reduced to a sticky thick sauce coating the chicken wings.
Instant Pot Method:
If using Instant Pot, put setting on “saute” and high heat. Add cooking oil. Then add ginger and cloves of garlic. Stir fry briefly. Add onions. Then add chicken wings and sear on both sides.
Add coca cola. Set the Instant Pot at high pressure and cook for 5 minutes. Then let pressure release naturally for 10 minutes before doing final forced release. Chicken wings can be served with some of the liquids. To reduce liquids further, set position at “saute” again, at low or medium setting. Simmer for 10 to 15 minutes to reduce liquids to a sticky coating on the chicken wings. Enjoy!
