Chipotle Black Beans Recipe | Vegan Black Beans and Rice Instant Pot Recipe

You’ve probably heard of the Instant Pot ¯\_(ツ)_/¯

But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!

Chipotle is one of our favorite places to eat out, mainly because finding a vegan option that is delicious is so simple. The black beans have always been a favorite and today I’m going to show you an simple way to make your own Chipotle black beans in your Instant Pot. As a bonus, I’m also going to show you how to make rice in your Instant Pot at the same time using the pot in pot (PIP) method.

These black beans are perfect if you meal prep at the beginning of the week as they stay excellent in the fridge for quite a few days. Also, if you follow Bright Line Eating, being able to cook the rice at the same time is perfect if you’re on maintenance, or you have family members who are not doing BLE with you.

1 cup dry black beans
2.5 cups water (you can also use veggie broth)
1 small yellow onion chopped
1 tsp chipotle chili powder
1.5 tsp smoked paprika
2 tsp cumin
1-2 Tbsp minced garlic

1/2 cup brown rice
3/4 cup water
the ratio of brown rice to water is 1:1.5, so if you want more rice, you can definitely make more. I have made up to 1.5 cups of rice in this particular tiffin tin.

Cook at high pressure for 35 minutes and let it do a natural pressure release.
