CREAMY DAIRY FREE RICE PUDDING | GLUTEN FREE



You’ve probably heard of the Instant Pot ¯\_(ツ)_/¯


But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!


How to make simple, dairy free rice pudding!

What you’ll need:
big sauce pan with lid
Full fat coconut milk (2 cans, plus enough water to equal 4 1/2 cups total)
Rice (1 cup white medium grain, rinsed and uncooked)
Sugar (1/2 cup)
Eggs (3 room temp. egg yolks)
Raisins (1/2 cup, optional)
Salt (1/4 tsp)
Cinnamon (1/2 tsp)
Vanilla (1 1/2)

Instructions:
*If using raisins, add them to a 1/2 cup of warm water and allow to soften while preparing your rice mixture.

Pour 4 cups coconut milk in big sauce pan (save the 1/2 cup for egg mixture). Heat until you see steam. Add rice and sugar, stir until sugar dissolves. Add lid, simmer on low and stir every 5 minutes, returning the lid each time. When the rice is tender, (15-20 minutes) prepare your ‘tempered’ egg mixture.

*Tempering (or warming your eggs) will prevent them from being cooked when you add them to your hot rice mixture.

Egg mixture: Heat 1/2 cup coconut milk in microwave until ‘just warm’. Add beaten egg yolks to milk and stir until completely blended. Add salt, cinnamon and vanilla.
Turn rice mixture off. Slowly pour in egg mixture, stir to combine. Add drained raisins.

Spoon mixture into serving dishes. Dust with cinnamon.
Refrigerate or serve warm.
