Gluten Free Chocolate Cheesecake – Instant Pot Recipe
You’ve probably heard of the
Instant Pot ¯\_(ツ)_/¯But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.
Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!

The original recipe suggests 20 oreo cookies + 4 tbsp of melted butter for the crust. I was not able to find gluten free cookies that day so I tried granola bars.

Crust:
In this video, I used 6 mini granola bars from Aldi.
I would recommend finding gluten free oreos/cookies from other stores. Add 4 TBSP of melted butter to make the crust. Freeze while mixing the cheesecake ingredients.
Cheesecake:
2 boxes cream cheese (8oz each)
1 tsp cocoa powder
1/4 cup sugar
1/4 cup Light Brown Sugar
2 egg yolks
1 whole egg
1/4 cup sour cream
8 oz semi-sweet baking chocolate (melted)
1 tsp coconut flour (or any flour of your choice)
1/2 tsp vanilla extract
