Gluten Free & Keto Friendly Instant Pot Cheesecake

You’ve probably heard of the Instant Pot ¯\_(ツ)_/¯

But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!

This Gluten Free and Keto Friendly cheesecake was modified from the Instant Pot New York Cheesecake #17 recipe with the link listed below. In making modifications, almond flour was substituted for graham crackers and Swerve confectioners and granular sugar (erythritol) was substituted for regular sugars.

*Equipment: Instant Pot, Fat Daddio 7-inch removable pan, parchment paper and a hand mixer

*Gluten Free, Keto & Paleo Crust
-2 cups Almond Flour
-7 tablespoons Swerve confectioners sugar
-1 teaspoon Cinnamon
-7 tablespoons Butter
-Pinch of Kosher Salt

1) Lightly toast the almond flour in a skillet over medium heat until golden for about 4-5 minutes.
2) Transfer flour to a small bowl and mix in sugar, cinnamon and salt. Add in butter and mix until combined. Press into the 7-inch Fat Daddio removable bottom pan lined with parchment paper and freeze until ready to use.

-Almond Flour suggestions: Trader Joe’s, Blue Diamond, Bob’s Red Hill, etc.
-Sugar Substitute: Swerve Confectioners and Granular
-Fat Daddio pan:

*Cheesecake #17: Substitute Swerve Granular sugar for the 2/3 cup of regular sugar

*Sour Cream Topping
-1/2 cup sour cream
-1 tablespoon Swerve granular sugar
-1/2 vanilla

Mix all ingredients until combined and spread on top of the cheesecake. cool.
