Recipe–

Instant Pot Butternut Squash & Quinoa Chicken Stew

Ingredients
1 T.olive oil
1 C. FD chopped Onion
1 T. Minced garlic
1-1/2 C. FD Chicken Slices
2 t. FD Oregano
2 t. FD Parsley
2 t. Curry powder
1 t. Sea Salt
1/2 t. Black pepper
3 C. FD Butternut Squash
1 C. FD Quinoa
1 C. FD Tomato Dices
4 C. Water
4 C. chicken broth (or 4 more cups water plus 4 t. Thrive Chicken Bouillon)
1 T. Lime juice

Instructions
1. Select ‘Saute’ to heat the Instant Pot. Once ‘Hot’ displays add the oil, then stir in onion, garlic, and all spices. Saute for 2-3 minutes until the onions are toasted.
2. Add butternut squash cubes, chicken, quinoa, chopped tomatoes, and water. Lime juice and chicken broth.
3. Close the lid and turn the pressure valve to ‘Sealing’ position. Cook on ‘Manual’ mode on high pressure for 15 minutes. When the cooking time is up, let the pressure release naturally for 15 minutes before turning the pressure valve to release any remaining pressure.
