You’ve probably heard of the
Instant Pot ¯\_(ツ)_/¯But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.
Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!
Today I am cooking at home and making Instant Pot Birria. I will be making cheesy quesa tacos and consomé for dinner. This popular L.A. street food style street birria is always a hit in my house. Whether it’s quesatacos or quesatortas, it is a requested favorite.

INGREDIENTS
cooking oil to brown meat
4 lbs (1.81 kg) beef chuck roast meat
1 tsp salt
1/2 tsp black pepper
1/2 small onion
1 cup (236.5 ml) water for the pan
3 extra cups (710 ml) of water for Instant Pot
**CHILE PUREE
1 chipotle chile in adobo sauce
6 guajillo chiles
1 ancho chile
1 pasilla chile (add 1 cup water to the blender for puree)
1 chipotle chile in adobo sauce
2 1/2 cups (591 ml) water (for boiling and soaking chiles)
2 Tbsp (20 g) beef bouillon powder
2 tsp Mexican oregano
1 tsp dried thyme
1/8 tsp (adjust to your preference)
1/8 tsp (adjust to your preference)
2 bay leaves
6 cloves garlic
**For The Quesa Tacos
rendered fat from birria broth
cooking oil
corn tortillas
10 oz shredded Oaxaca cheese
