INGREDIENTS:
2 teaspoon Dried Basil
2 teaspoon Dried Parsley
1 teaspoon Pink Salt
½ teaspoon Black Pepper
1 Bay Leaf
1 medium Shallot
3 Garlic Cloves
15 ounce can Tomato Sauce
8 ounces Pasta (cooking time 9-11 minutes)
2 ounces Mozzarella Cheese
¼ cup Pecorino Romano or Parmesan Cheese
¼ cup Fresh Italian Parsley
¼ cup Fresh Basil
⅓ cup Vegetable or Chicken Stock
⅓ cup Filtered Water
⅓ cup Dry Red Wine (may substitute with water or broth)
1 big Chicken Breast
INSTRUCTIONS:
1. cut Chicken into small similar sized pieces. chop shallots and mince garlic. chop fresh parsley and basil. Set Instant Pot to saute on HIGH. Add a drizzle of olive oil. Add shallots and garlic and stir for 30 seconds. Add chicken and dry spices. Stir for 1 minute. De-glaze with wine. Add stock, sauce and stir well. Add pasta. Add water and then add bay leaf. Push cancel on the Instant Pot and making sure silicone ring is on, put on lid. Set to HIGH PRESSURE for 3 minutes. Allow 5 minutes of natural pressure and then perform a fast release. Stir pasta. Add remaining ingredients, reserving a pinch of fresh grated cheese and parsley for garnish. Stir for 2-3 minutes until cheese melts. Enjoy!
