How to make Mexican Rice in Instant Pot

You’ve probably heard of the Instant Pot ¯\_(ツ)_/¯

But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!

– 2 cups long grain rice or Jasmine rice
– small can pf tomato sauce
– 6 dry measuring cups of water
– 3 tbsp. of knorr powder chicken bouillon
– dehydrated or fresh onion
– dash of cumin

1. Set pot on saute and pour canola or vegetable oil enough to just cover bottom of pot evenly. Add 2 cups of long grain rice fry until no longer translucent and toasted and golden. ( Jasmine rice is a excellent substitute)

2. Add a small can of tomato sauce, 6 cups of water if using the dry measuring cup used to measure rice.

3. Add 3 tbsp. of knorr powder chicken bouillon, dehydrated or fresh onion, & a dash of cumin.stir well making sure ingredients are well combined.

4. Set instant pot pressure cook setting 5 minutes. After 5 minutes fast release but leave pot covered for 5 minutes or more until there isn’t any liquid. Once rice is cooked remove to another bowl or casserole dish to prevent scorching as twice will continue to cook.
