You’ve probably heard of theInstant Pot ¯\_(ツ)_/¯
But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.
Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!
Instant Pot Albondigas (Caldo de Albondigas) is a Mexican meatball soup. A delicious fresh tomato based stock loaded with meatballs and vegetables. Food to warm you up in cold weather.
1 lb ground meat (beef, chicken or pork)
1-2 tbsp minced mint
½ tsp ground cumin
1 tsp garlic powder
3 tbsp white rice
Salt and pepper to taste
Sliced white onion
2 cloves garlic, minced
2 pcs red tomatoes, sliced
1 cup water + 4 cups water
½ tsp cumin
1 tsp oregano
2-3 tbsp chicken powder
2 pcs calabacita, sliced
2 pcs carrots, sliced
2 pcs potatoes, sliced
3 pcs yellow chili peppers (make cuts into the peppers)
For meatballs: Combine all ingredients. Form mixture into meatballs. Set aside
Set instant pot on Saute setting for 7 minutes
Add oil. Saute onion, garlic, and tomatoes. Add 1 cup water.
put tomato mixture in the blender. Blend until smooth.
put tomato puree in the instant pot. Add 4 cups of water.
Drop the meatballs into the soup. Add 1 tbsp. chicken powder and cumin
Close the lid and line up the valve into sealing position.
Set the instant pot into a high pressure cook and set the timer for 10 minutes.
When the timer goes off, do “fast Release” by turning the sealing valve to “vent”
Open the lid. Set instant pot on Saute setting for 10-13 minutes
Add yellow chili peppers, potatoes, oregano, and 1-2 tbsp chicken powder to your liking. Simmer until the potatoes are tender
Add calabacita and carrots. Give the vegetables time to cook.
Serve the albondigas soup in deep bowls.
Garnish with cilantro.
