Instant Pot Beef Taquitos l incredible and Tender Mexican Shredded Beef



You’ve probably heard of the Instant Pot ¯\_(ツ)_/¯


But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!


When I do my meal planning, I always think of what my week is going to look love with all the errands and work. For those days when I know for sure I won’t have even 30 min to stay in the kitchen, I choose Instant Pot meals. While the meat is cooking, I am able to do other things. I swear to God this whole overachieving thing is going to kill me one day 🙂 Anyway, once the meat is ready, you shred it, roll up the taquitos, bake them for 10 min and dinner is done. Don’t forget the guacamole, salsa and sour cream on the side. Delish!

INGREDIENTS
– 1 1/2 LB BEEF SHOULDER

– 2 1/2 TBSP TACO SEASONING, DIVIDED
– 1 TSP SMOKED PAPRIKA

– 1 TSP CHILI PEPPER
– SALT TO TASTE

– OLIVE OI

– 1 SMALL YELLOW ONION, cut LENGTHWISE

– 1 CUP BEEF STOCK

– 1/2 TOMATO SAUCE

– 2 TBSP LIME JUICE

– 1 1/2 CUP SHREDDED CHEESE, PREFERBLY MONTERAY JACK WITH JALAPENO

– 12 TORTILLAS
