Instant Pot Carrot and Squash Soup : Episode 150

You’ve probably heard of the Instant Pot ¯\_(ツ)_/¯

But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!

Instant Pot Carrot and Squash Soup

1 Tbsp Oil
2-3 Carrot chopped
1 Onion chopped
1 Lb Squash Cubes
1 Tsp Garlic
1 Tsp Ginger
2 Cups Vegetable Stock
Salt and Pepper

Dump all the ingredients into your instant pot and cook for 20 minutes.

Blend soup until creamy and adjust seasoning.

Add a drizzle of cream for some richness! Serve with a salad.

Perfect for those long days at the office or when the kids are in bed and you need to indulge yourself!
