Instant Pot Cauliflower 'Potato' Salad | Low-carb Recipe

You’ve probably heard of the Instant Pot ¯\_(ツ)_/¯

But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!

Creamy and tangy cauliflower ‘potato’ salad! Great for a fast lunch and healthy side-dish!

Cauliflower ‘Potato’ Salad Recipe (6 servings per recipe):
– 1 big Cauliflower head (~2 lb)
– 1 cup Water (for cooking)
– 3 big hard-boiled Eggs
– 5 slices Bacon, chopped
– 1 cup Cheddar cheese, shredded
– 2 stalks Celery, chopped
– 1/2 cup Mayonnaise
– 1/2 cup Greek yogurt
– Juice of 1 Lime
– 1 tsp Paprika
– 1 tsp Dill
– 2 Tbsp Chives
– Salt and Black pepper to taste

1. cut the cauliflower into bite-size pieces.
2. Add the cauliflower and water to the Instant Pot then put the eggs on top.
3. Close and lock the lid to the instant pot and set the pressure to High for 5 minutes. Note that this will make the cauliflower tender, for a more firm texture lower the time.
4. After pressure is reached and 5 minutes have passed, turn off the Instant Pot and CAREFULLY fast release the pressure.
5. Remove the eggs and put in a bowl with cold water to cool down. Strain the cauliflower in a colander and rinse with cool water to halt cooking.
6. To make the dressing add the mayonnaise, yogurt, lime juice, paprika, chives, dill, salt and pepper to a small bowl and mix.
7. Assemble the salad by combining the cooled cauliflower, eggs (chopped), bacon, cheddar cheese, celery and dressing. Mix to incorporate.
8. Serve with your favourite protein and green salad or even on it’s own as a fast lunch.
