INSTANT POT CHICKEN AND BROWN RICE | HEALTHY ONE POT DINNER

You’ve probably heard of the
Instant Pot ¯\_(ツ)_/¯But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.
Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!
Instant pot chicken and brown rice is a healthy one pot dinner. Brown rice and chicken are cooked in instant pot and ready in 22 minutes. Healthy vegetables are added to the dish too.
This instant pot chicken and rice is so simple to make! I love my instant pot! It is very convenient on busy days! I cooked my vegetables separately because in instant pot they will acquire mushy! Add any vegetables you love! It takes 5 minutes to saute vegetables.
I used chicken thighs for this instant pot recipe. The chicken thighs turned out very tender, juicy and falling apart! I used brown rice because it is healthier than white rice. The rice was cooked perfectly in the instant pot.
I used vegetable broth for this recipe that what I had at home. You can use chicken broth for even more flavor.

INGREDIENTS:
1.5 lbs chicken thighs
2 cups brown rice, unrinsed
2 1/2 cups vegetable broth
mixed vegetables (sweet corn, broccoli, green peas)
1/2 onion
2 carrots
1 chopped red bell pepper
3 cloves garlic
salt to taste
black pepper to taste
2 tbsp dried dill
2 tbsp dried parsley
olive oil for cooking
