Instant Pot Chicken and Rice
You’ve probably heard of the
Instant Pot ¯\_(ツ)_/¯But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.
Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!
This recipe for chicken and rice in the Instant Pot makes an excellent fast, kid approved, weeknight meal. The rice turns out just right and the carrots are cooked through yet not mushy. It pairs very well with Sriracha chili sauce for a little kick. This recipe will work fine with any other electric pressure cooker brand as well. Enjoy!
2 Pounds Chicken Thighs ( I prefer bone in/skin on)
1 big onion chopped
3 carrots chopped
3-4 cloves of garlic (I always stop up wishing I put more in)
1 TBS Paprika
2 tsp Tumeric
2 tsp Cumin
2 tsp Oregano
2 tsp salt
1 tsp pepper
2 cups frozen peas
2 cups water
