Instant Pot Coconut Milk Chicken | Keto Recipes | Thai Recipes



You’ve probably heard of the Instant Pot ¯\_(ツ)_/¯


But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!


In this video I will be using my instant to make Coconut Milk Chicken. A whole chicken is used to make this beautiful for Thai inspired meal and ready in 40 minutes.

1 -2 tbls of coconut oil
1 whole chicken
2 cans of full fat coconut milk
1 cup of chicken broth
2 cups of fresh basil
1 Thai red chili
1 lemongrass stem thinly sliced
6 cloves of garlic
2 inch piece of ginger thinly slices
3 tbls of fish sauce

1. Turn on the instant to saute and heat til hot.
2. add coconut oil
3. put whole chicken in pot and brown on all sides
4. turn off suate program, combine the rest of the ingredient into a bowl except for lime juice
5. pour coocnut milk mixture over the chicken
6. put lid on instant pot and cook on high pressure for 25 minutes.
7. carefully remove chicken from pot and cut into serving pieces
8. turn insatnt pot back to saute and reduce the liquid for about 5 minute. Add lime juice.
put pieces of chicken over cauliflower rice. Pour coconut milk broth over chicken and rice. Serve!
