Instant Pot Custard Recipe



You’ve probably heard of the Instant Pot ¯\_(ツ)_/¯


But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!

Heat milk until steaming in the Instant Pot using sauté function. Turn Instant Pot off. Add sugar and pinch of salt to milk. Mix until sugar is dissolved. Pour into a cup with a spout.
Beat eggs in a bowl. Add a little milk to the eggs and mix well. Stream in remaining milk while whisking. Strain using a fine mesh sieve. Add vanilla extract and mix. Pour into ramekins.
Wash and dry Pot. put trivet in pot. Add water. put ramekins on top of rack, stacking them. You can fit 4 on the bottom. Cover, seal and pressure cook on low pressure for one minute. Turn off unit and let sit for 10 minutes. Release any remaining pressure and open lid. Using tongs, remove ramekins from pot. Serve hot or cold. If serving cold, leave ramekins out for 30 minutes until room temperature. cool for a few hours.
It’s best to put hot ramekins in ice water to stop further cooking after removing from Instant Pot.
Ingredients: 2 cups milk, ½ cup sugar, pinch of salt, 3 big eggs, ½ tsp vanilla extract.
