But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!

As kids, we would look forward to getting elote after our grocery runs on the weekend. Elotes are an amazingly delicious street-style Mexican Corn. Basically, it is corn on the cob (or corn kernels) dressed in layers of crema/mayo mixture, butter, lime, and chili seasoning. Now that I am mostly cooking at home, I just recreated my favorite recipe and oh my wow these are incredible. Check out the video above for Instant Pot Elotes. Food Notes:
– I used my Instant Pot for convenience, you may also make this on the stovetop by boiling corn for about 30 minutes or until done.

– I highly recommend using Mexican crema for an authentic taste. You may use sour cream instead if crema is unavailable.

– I also highly recommend using cotija cheese for authentic taste. If unavailable, you may use fetta or parmesan cheese.

– You may also add hot sauce at the stop for a spicier flavor.
