Gongura Baby potato Biryani – A tangy, spicy and lip-smackingly delicious biryani made with gongura pickle, Baby potatoes, spices in an Instant Pot. Enjoy this popular South Indian comfort food in just 30-minutes.

Ingredients :
2 cup Basmati Rice (rinse and soaked for 20 mins)
8 to10 (1 inch) Baby potatoes (wash and peeled) OR Regular potato, cut into pieces
Whole Spices: *
1 inch Cinnamon stick
1 Mace and Star Anise
5 Cloves
4 Cardamom
2 Bay Leaves
( if required replace the whole spices with 1/2 tsp of garam masala, add after tomatoes are mushy along with other spices)
2 tbsp Ghee / Clarified butter
1/4 tsp Cumin seeds / Jeera
1.5 cups (2 medium) Onions, Thinly Sliced
2 medium size Green Chili, Slit
1 tbsp Ginger Garlic Paste
1 medium Tomato, chopped
1/4 tsp Turmeric Powder
1 tsp Chili Powder
1 tsp Coriander Powder
1 tsp Salt (as required)
1.5 tbsp Gongura Pickle (adjust according to your spice level)
3 sprig (1/4 cup) Mint Leaves
5 sprig (1/4 cup) Coriander Leaves / Cilantro
