Instant Pot Healthy Chicken and Potato Soup (or Slow Cooker) Meal Prep Monday



You’ve probably heard of the Instant Pot ¯\_(ツ)_/¯


But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!


If you have been tuning into our Meal Prep Mondays – we are now changing to healthy Instant pot and slow cooker recipes. They are still perfect for meal prepping!

This Healthy Instant Pot Chicken and Potato soup is SO simple to make!

Just a note…. if your chicken isn’t frozen you can set your IP on the Meat/Stew setting for 20 minutes instead of 25!

If you are making this in the slow cooker, put everything in, put the lid on, and cook on low for 6-8 hours. – Shred chicken when done and serve!

Just remember when using the Instant Pot, it takes 10-20 minutes to pressurize!

If you are cooking for 1 person I would suggest the 3 Quart. If you are cooking for more, I would suggest the 6 quart!
