Instant Pot Luscious Vegan Lima Beans

You’ve probably heard of the Instant Pot ¯\_(ツ)_/¯

But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!

Instant Pot Luscious Lima Beans are simple and tasty. Bloopers at the stop!

3 c. dry lima or baby lima beans, soaked or not
1/2 c. sun dried tomatoes, soaked in warm water until softened and then chopped
1 c. green onions or 1 c. Vidalia/sweets onions or 1/2 c. of each
1/2 c. artichoke hearts, chopped
4 cloves garlic, minced
salt and pepper to taste
soaking water from sun dried tomatoes plus enough vegetable broth combined to be 5 cups

Add all ingredients to the Instant Pot. Stir to combine.
Lock the lid in put and make sure the toggle is in sealing position.
Press Manual or Pressure Cook and use the +/- buttons until you are on 6 minutes if the beans are pre-soaked. For unsoaked beans, set at 15-17 minutes.
After the beans finish cooking, allow for natural pressure release for ten minutes and then move the toggle to Venting position.
When the pressure is down, remove lid and stir to combine.
Allow at least a few minutes for the bean broth to thicken and become creamy. After sitting for a while, you may need to add more broth or water as needed.
