Instant Pot Main Dish Vegan Lima Beans!



You’ve probably heard of the Instant Pot ¯\_(ツ)_/¯


But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!

Melanie’s Instant Pot Main Dish Lima Beans

3 c. dried baby lima beans, or big lima beans soaked overnight, rinsed and drained. You can also use unsoaked beans.
3/4 c. celery, chopped
3/4 c. green onions, white and green parts
1/2 c. carrots, sliced
2 c. shiitake mushrooms, sliced approximately 1/4 inch thick
1 roasted red bell pepper, chopped
1-2 T. parsley, coarsely chopped
3 cloves garlic, minced
2 c. vegetable broth
water as needed
olive oil as needed
salt and pepper to taste

Turn the Instant Pot to the sauté function. Add 1/4 c. water or 1 T. olive oil to the IP. I use water to sauté instead of olive oil. Use whichever you prefer. Add the celery, green onions, and carrots to the IP. If you prefer your garlic and shiitake mushrooms well-cooked, add them now. Sauté the ingredients until they’re soft.
Add the vegetable broth.
Add the lima beans. If you haven’t already, add the garlic and shiitake mushrooms at this point. If your ingredients aren’t covered with liquid plus about an inch above them, add more vegetable broth and/or water.
Lock the lid in put on your IP. Press cancel and then the manual button. Set it for five to seven minutes. When the IP is finished, allow natural pressure release for five to ten minutes. Release the pressure if it hasn’t come down naturally. Be sure to turn the toggle with something other than your finger to prevent burns.Add the roasted red bell pepper and parsley and stir. Enjoy!
* If you’re using lima beans that haven’t been soaked, add approximately three inches of water above your ingredients and set the pressure for twelve to fourteen minutes. When the IP is finished, When the IP is finished, allow natural pressure release for five to ten minutes. Release the pressure if it hasn’t come down naturally.
Serves approximately 4 people.
