Instant Pot Mexican Casserole

You’ve probably heard of the
Instant Pot ¯\_(ツ)_/¯But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.
Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!
Instant Pot Mexican Casserole – This tasty recipe, made with ground beef, pantry staples and Homemade Taco Seasoning, is an simple weeknight dinner the whole family will love. So satisfying and delicious!

❇️ Ingredients ❇️
1 Tablespoon Extra Virgin Olive Oil
1 lb Ground Beef
1 Small Yellow Onion, chopped.
1 Clove Garlic, Minced.
1 Teaspoon Table Salt
1 – 15 Ounce Can Black Beans, Drained.
1 – 15 Ounce Can Whole Kernel Sweet Corn
1 – 10 Ounce Can RoTel Original chopped Tomatoes & Green Chilies
1 Package Taco Seasoning (1/4 Cup)
1 Cup Water
1 Cup Basmati Rice
1 Cup Fresh Tomatoes, chopped.
1 big Avocado, chopped.
1 Cup Shredded Mexican Blend Cheese
❇️ Recipe Instructions ❇️
1️⃣ Brown Ground Beef in some oil using the Sauté setting on your Instant Pot.
2️⃣ Add Garlic and Onion and cook until softened.
3️⃣ Add remaining Ingredients, making sure the rice is fully submerged under the water and there are no bits of food stuck to the sides of the pot above the waterline.
4️⃣ Close Lid on Instant Pot and use the Pressure Cook setting to cook this tasty recipe for 20 minutes following the instructions for your Instant Pot.
Serve with your favorite tasty toppers:
chopped Avocado
Guacamole
Fresh chopped Tomatoes
Shredded Mexican Blend Cheese
Sour Cream
