What is for dinner? It is always been a question. This simple and fast recipe of vegetarian burrito bowl can solve your problem. This is a very basic bowl for busy days. Just toss available ingredients in the instant pot and your meal is ready in no time and the yogurt avocado dip enhances the taste of this simple burrito bowl. You can add more ingredients love guacamole, grilled tofu and retried beans according to your choice.

INGREDIENTS
1 cup rice washed and soaked for 10 minutes
2 tbsp oil
2 tsp garlic
½ cup onion
½ cup capsicum
¼ cup corn/black beans/red beans
1 tsp cumin powder
3 tsp taco seasoning
1 tsp red chili powder
½ cup Canned tomato sauce
1-½ cup chicken broth/veg broth/water
2 tsp salt
Coriander
Fajita Veggies
INGREDIENTS :-
Mushroom :
1 tsp oil
1 tsp garlic
2 cup mushroom
½ tsp salt
Veggies :
2 tsp oil
1 tsp garlic
1 cup onion
2 cup capsicum
1-½ tsp salt
1 tsp cumin powder
3 tsp fajita seasoning
1 tsp red chili powder
1 tsp lemon juice
Yogurt Avocado Dip :
½ cup yogurt
2 green chilies
¼ tsp garlic
Coriander
1 avocado
½ cup water
½ tsp salt
1 tsp lime juice
