Instant Pot Mushroom and Shrimp Risotto

2-3 Shallots or 1 big Yellow Onion
4 Tablespoons of Butter
2 Tablespoons Minced Garlic
1 Cup Arborio Rice (unwashed)
8oz of Shiitake Mushrooms (or mushrooms of choice)
1/2 Cup of White Wine
2 Cups of Stock (1 Mushroom/1 Chicken)
1 Cup of Frozen Peas (thawed)
1 Cup of Parmesan Cheese
1 Tablespoon of Soy Sauce
Jumbo Shrimp with Garlic and aged Bay Seasoning
Dried Thyme
Green Onions or Parsley
Salt and Pepper

Cook for 6 Minutes and fast Release

Total Cook Time: 10-12 Minutes. 3 Minutes to Pressure – 6 Minutes to Cook – 2 Minutes to Release Pressure
