Instant Pot Potato Salad



You’ve probably heard of the Instant Pot ¯\_(ツ)_/¯


But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!


One delicious Potato Salad is in your future. It pains me to write out this recipe knowing my potato salad is chilling in the fridge. Talk about mouth watering. It is absolutely delicious.

Ingredients:
8 medium russet potatoes, peeled and cubed
2 cups of water
3 tbsp. yellow mustard
4 tbsp. brown spicy mustard
3 to 5 eggs
3 stalks of celery, chopped
1 medium onion, chopped
Dill relish
pinch of paprika

In our 8qt pressure cooker, put your potatoes into your instant pot with 2 cups of water. If you don’t have a colander type basket, put your potatoes on a trivet. Pressure cook on high for 6 minutes then perform a fast release.

In a plastic bowl, add your chopped vegetables and dill relish. Mix together then put your potatoes on top. Add your yellow mustard and brown spicy mustard on top and partially cover with lid for about an hour to an hour and half.

Now that you have given your potatoes adequate time to cool add 3 spoons of mayonnaise and mix up your salad. Tastes great. Enjoy.
