Instant Pot Potato Salad

You’ve probably heard of the Instant Pot ¯\_(ツ)_/¯

But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!

Here is a very simple recipe for making some delicious Potato Salad all in your Instant Pot.

3 pounds Yukon Gold Potatoes, chopped
2-3 Celery Ribs, sliced
1/4 cup Red Onion, chopped
1 cup Mayonnaise
2 Pickles, chopped
2 Tablespoons of Pickle Juice
1 cup water
4 eggs
1/4 cup Buttermilk
2 Tablespoons Mustard

Add the potatoes into the instant pot. Pour the cup of water on top. Then put the 4 eggs on top of the potatoes. Pressure cook on high for 4 minutes. When done fast release the steam.

Remove the eggs and put in water to cool down. Drain the water from the instant pot. Remove the potatoes and clean our the instant pot by running it under the water in the sink. put warm potatoes back into instant pot.

Separate the egg yolks from the whites and put the yolks into a bowl and mash. Add the mayonnaise, buttermilk, mustard and the pickle juice. Stir well and add salt and pepper to taste.

Pour the dressing over the warm potatoes. Add the egg whites that you have chopped. Then add the pickles celery and onion. Stir well. cool in the refrigerator for a few hours or overnight. Serve and enjoy!
