Instant Pot Pressure Cooker Leek and Potato Soup

You’ve probably heard of the
Instant Pot ¯\_(ツ)_/¯But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.
Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!
3 big leeks, white and light green parts only, washed, roughly chopped (about 4 cups)
potatoes – 500 g (chopped)
unsalted butter – 50 g
cloves garlic – 3 (peeled and smashed)
thyme – 1 teaspoon
chicken or beef or veg stock – 800 ml
ground black pepper – 1/4 teaspoon
salt – 1 teaspoon
