Instant Pot Pulled Pork in Mexican Adobo Sauce

You’ve probably heard of the Instant Pot ¯\_(ツ)_/¯

But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!

This Instant Pot Pulled Pork Adobo makes saucy, tender shredded pork perfect for taco filings. Cooked in Mexican Adobo sauce made with Ancho chilis, fragrant cinnamon and cloves.

PRESSURE COOKER I USE (affiliate links):
· Instant Pot DUO 7-in-1:

• 2-5 pounds pork shoulder, tenderloin or shank
• salt
• pepper
• cajun seasoning chili, taco or any other Mexican seasoning mix
• 3 Ancho chiles soaked in hot water for 1/2 hour *
• 3 tomatoes
• 1/4 onion
• 1 garlic clove
• 1 cup beef broth
• 2 tablespoons white vinegar; optional
• 1 teaspoon dried oregano
• 1/2 teaspoon cinnamon or 1/4 cinnamon stick
• 1/4 teaspoon cloves or 2 whole clove pieces

*roasted red pepper can be substituted in a pinch (no soaking needed)

Pickled red onions made the perfect taco topping for this pulled pork.
