Instant Pot Recipe | Tortellini Vegetable Soup

You’ve probably heard of the Instant Pot ¯\_(ツ)_/¯

But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!

If the thought of making soup conjures images of long hours spent chopping vegetables and repetitively stirring your pot, you’re ready for this Instant Pot recipe for tortellini and vegetable soup.

It all comes together in minutes. You begin by sauteing onions and garlic then adding chicken broth, tomato purée, a bag of frozen veggies and water. From there you let the Instant Pot do its thing for 15 minutes before adding in the tortellini and spinach or escarole.

That’s it!

In roughly half an hour you’ll have a hearty pot of veggie tortellini soup ready to warm you up and fill you up.
