Instant Pot Vegan Dirty Rice



You’ve probably heard of the Instant Pot ¯\_(ツ)_/¯


But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!


A southern, Creole classic just in time for Fat Tuesday, Mardi Gras and Lent….and if you have no thought what any of that is…then this is just a delicious vegan dinner thought!

The instant pot means just about 10 mins of work for you and it will do the rest, but no worries, it can be made stove top too!

Also – we’ve included instructions in the post to make this WFPB-NO if that’s the type of recipe you are looking for!

Allergens: Wheat/Soy but can be Top 8 Free following directions in post.

Ingredients:

* 1 tbsp olive oil (can sub for vegetable stock)
* 1 1/2 cups brown rice
* 1 red onion, chopped
* 1 green bell pepper, chopped
* 2 ribs celery, chopped
* 4 cloves garlic, minced
* 2 tsp creole seasoning
* 1/2 tsp salt
* 1/4 tsp dried thyme
* 1/2 lb vegan beefless crumbles (we use Gardein)
* 1 cup vegan chick’n strips, cut into bite size pieces (we use Gardein)
* 1/2 cup vegan sausage, cut into slices (about 2 sausages – we used Field Roast Apple Sage)
* 1 quart vegetable broth (low sodium preferred)
* 2 bay leaves
* sliced green onions, garnish

1️⃣ chop the pepper, onions, celery and garlic.

2️⃣ Turn instant pot onto Saute method. Add in your olive oil (or veg stock is avoiding oil).

3️⃣ Once hot, add in your rice and toast for 3 minutes. Stirring often so it doesn’t burn on the bottom.

4️⃣ Add in your onions and peppers, stirring often and cooking 3 minutes or until translucent. 
5️⃣ Add garlic and saute for 1 minute. Turn off saute method.  Add creole seasoning, salt and thyme. Stir together. 

6️⃣ Add in vegan beefless cumbles, chick’n strips, and cut sausage. Stir. Add vegetable stock and bay leaves.  Stir together again.
7️⃣ put on instant pot lid and make sure that the pressure valve is sealed. Press manual and cook on high pressure for 25 minutes.
8️⃣ When the time goes off, let the pressure release via fast Release. *If you are not sure about this, please read your manual.
9️⃣ Let the lid stay on for 10 minutes before serving. 

🔟 Stir everything together serve with sliced green onions on top.
