Keto Instant Pot Ribs with White Barbecue Sauce

You’ve probably heard of the Instant Pot ¯\_(ツ)_/¯

But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!

I turned to my Instant Pot to make a rib recipe that turns out tender, flavorful, ribs in a fraction of the time. The ribs are seasoned with a smoky dry rub before they go in the Instant Pot, where the flavor gets infused into the meat under high pressure. They can be eaten straight out of the Instant Pot, but finishing them on the grill takes the flavor to the next level.

For the Ribs
1 rack (3-lbs) baby back ribs
1 cup water
¼ cup apple cider vinegar
2 teaspoons liquid smoke

For the Rub
1 tablespoon paprika
½ tablespoon garlic powder
½ tablespoon onion powder
½ teaspoon black pepper
½ tablespoon chili powder
½ tablespoon cumin
½ teaspoon cayenne pepper
1 teaspoon salt
½ teaspoon dry mustard

For the Barbecue Sauce

1 ½ cup mayonnaise
¼ cup apple cider vinegar
1 tablespoon dijon mustard
1 teaspoon black pepper
1 teaspoon salt
1 teaspoon garlic, minced
2 tablespoons Swerve (or preferred sweetener)
2 teaspoons prepared horseradish

Nutrition Summary:
This makes a total of 5 servings of Instant Pot Ribs with White Barbecue Sauce. Each serving comes out to be 645.83 Calories, 42.76g Fats, 2.38g Net Carbs, and 57.34g Protein.
