Keto ~ Low Carb Cheesecake ~ Ninja Foodi

You’ve probably heard of the Instant Pot ¯\_(ツ)_/¯

But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!

Low Carb Playlist:

I’m using my 8QT Ninja Foodi
Keto ~ Low Carb Cheesecake
2 cups ground almonds/ mixed nuts (1 cup would’ve been perfect)
5 tablespoons melted butter (adjust if using less nuts)
16 oz cream cheese softened
1 cup sour cream
2/3 cups Swerve
2 eggs
2 pinches of salt (the nuts I used were salted, I didn’t add any salt)
1 tablespoon vanilla

Grind the nuts and add melted butter. I placed parchment paper on the bottom of the pan and lightly sprayed the pan with coconut oil. put the nut mixture in the pan. Press the bottom and sides. Let it sit in the freezer while preparing the cheesecake.

Blend all other ingredients until smooth.

1 cup of water in the pressure cooker
Pressure cook 28 minutes
Natural release 10 minutes

Since I was using the Foodi and it has the air fryer function. I broiled the top of the cheesecake for 4 minutes. I could’ve went longer but this was my first pressure cooker cheesecake and I wanted to see how it would taste without browning it too much. We were shocked how delicious this turned out. Since we’re low carb I did add whipped topping. I’m definitely making this again soon.
