But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.
Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!
Our recipe for tasty keto carnitas can be made in either your Instant Pot electric pressure cooker or any slow cooker. Super simple to make, this recipe is not only keto, it’s also Whole30-compliant, paleo-friendly and starts with a simple rub made from spices that are probably already in your cabinet. Just add a pastured pork shoulder (Boston butt cut) from Thrive Market and you’re excellent to go! If you’re avoiding carbs, just serve your carnitas in leaves of butter lettuce, or try our cassava flour tortillas recipe for a paleo-friendly option.
1 (32-ounce) Thrive Market Boneless Boston Pork Butt
1 ½ teaspoons paprika
1 ½ teaspoons sea salt
1 teaspoon garlic powder
1 teaspoon cumin
½ teaspoon ground black pepper
¼ teaspoon cayenne pepper
1 big yellow onion, sliced
1 cup water
In a small bowl, whisk together all the spices. Rub spice all over pork.
Add onions to inner pot of pressure cooker, pour in water and squeeze limes. put pork on top of onions.
Lock the lid in put. Seal the pressure value. Cook on high pressure for 35 minutes. Let natural release for 15 minutes, then fast release. Remove Pork to a work surface. Using 2 fork shred pork. Serve.
Slow cooker method:
Add onions to inner pot of slow cooker. put pork over onions. Cover and cook for 8 to 10 hours on low heat. Remove to work surface and wit 2 forks shred.
put meat on leaves of butter lettuce, top with avocado, radish, chopped red onions..
