Knife Skills in a Wrap and the Onion Controversy

But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

How to Hone a Knife:

Filling (can be made a day ahead):
1 chopped yellow onion cooked in 2 Tbsp butter until translucent and golden brown
150g (5 oz box) baby spinach, chopped
30g herb mix (parsley, dill, tarragon, cilantro), chopped
2 scallions, sliced
Salt to taste (I used 1/2 tsp Diamond Crystal Kosher salt)
1/2 tsp pomegranate molasses
2 oz feta, crumbled (I love sheep milk feta from France, Valbresso brand)

Mix everything with your hands aggressively to wilt the greens. Taste and correct for salt and acidity.
