Instant Pot Low Carb Chicken Enchilada Casserole
This healthy and delicious Low Carb Chicken Enchilada Casserole recipe is simple to make in an Instant pot pressure cooker and tastes incredible. 6 Low Carb Chicken Enchilada Meal Prep Bowls – 304 calories per meal prep enchilada bowl, 7.6 grams of fat, 18 grams of carbs, 40 grams of protein.
Prep Time 10 minutes
Cook Time 60 minutes
Passive Time 40 minutes
2 Lbs (32oz) Chicken Breast
3 Cups Green Enchilada Sauce
1 Medium Red Bell Pepper
1 Medium Red Onion
1 Cup Yellow Corn
2 big Jalapenos
6 Carb Balance Low Carb Tortillas
1 Cup Mexican Style Four Cheese
1/4 Cup chopped Fresh Cilantro

Take out your Instant Pot pressure cooker and add the 2 lbs of chicken breast and 2 cups of green enchilada sauce. After that cover and cook on the chicken setting for 20 minutes.
After the 20 minutes shred the chicken with 2 forks. Next add the following ingredients: red bell pepper, red onion, yellow corn, and the chopped jalapeno. Cook for another 10 minutes.
Take out an oven pan and begin making 6 enchiladas with the chicken mixture. After that, add 1 cup of enchilada sauce to the top. Finish, by adding 1 cup of shredded cheese to the top.
Preheat your oven to 350F. Bake for 20 minutes. Remove and let it cool down. cut evenly into 6 pieces. Take out your meal prep containers and transfer them to your containers. Once ready to eat you can add fresh lettuce.
