The beauty of the one-pot pasta is that it is literally all cooked in one pot. I mean, how can you not love a recipe which produce only ONE dirty pan? … Neither one of us likes dealing with the hand wash items, which really sucks …
INGREDIENTS:
½ lb. pasta of your choice
1 cup Boiled Chickpeas – optional
2½ cups Stock or water
1 cup Tomatoes
1 small red onion – sliced thin
4 – 6 sweet mini peppers – sliced thinly
½ teaspoon salt
½ teaspoon pepper
1 teaspoon Red Pepper Flakes
4 big leaves fresh basil
1 – 2 garlic cloves – minced
Spinach or other favorite
Lemon Slices – 2
Vegetables of your choice can be added.
