Melt In Your Mouth instant Pot Steak Tacos | The College Cook



You’ve probably heard of the Instant Pot ¯\_(ツ)_/¯


But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!


INGREDIENTS 
-12-16 oz flank steak 
-1 onion
-1 can of chopped tomatoes-Juice of one lime
-2 Tbsp chili powder
-2 Tbsp cumin
-1 Tbsp chili lime seasoning 
-1/2 Tbsp garlic powder
-Pinch of salt & pepper
-(Spices can be subbed out for a packet of taco seasoning mix)
AVOCADO PUREE
-2 ripe avocados
 -The juice of 2 limes
-A handful of green onions (white bits included)
-1 Jalapeño cut into bits
-1 clove of garlic 
-Salt and pepper to taste 
METHOD 
(NOTE: I am using a pressure cooker but this can be made in a crockpot or dutch oven. The same steps apply, the only difference will be cook time. A slow cooker will be around 4 hours)

-chop onion and cut flak steak in half
-put pressure cooker on sautee setting, pout in a glug of olive oil and begin to sautee onions
-Add spices to onions and stir for 3 mins
-Pour in can of tomatoes and squeeze juice of one lime
-cut steak in half and put on top of tomato-onion mixture
-Switch pressure cooker to meat stew setting and close lid
-Set cooktime to 45 mins (around 4 hours if on crockpot/dutch oven)
-While steak is cooking combine ingredients for puree in blender and blend until smooth
-Toast tortillas
-Once steak is cooked shred into juices with a fork-Serve w/ puree and topping of your choosing
