MEXICAN RICE | Instant Pot Rice Recipe | Serves 4
You’ve probably heard of the
Instant Pot ¯\_(ツ)_/¯But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.
Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!
This colorful vegetarian dish is full of nutritions from Vegetables and different type of beans and really boost the flavors by using mint, green chilies, and cumin powder.
Here I have used red Kidney beans, Green Beans, Black-eyed beans, Borlotti beans, Haricot beans with the addition of Chickpeas and sweet corn. But you can always mix your favorite beans, though Red Kidney beans and Green beans are highly recommended. Here is the list of ingredients:
Oil- 2 tbsp
Garlic- 5 to 6 Cloves
Green Chillies- 1 to 2
Onions- 1/2 Cup
Tomato Puree- 1/3 Cup
Carrot- 1/3 Cup
Different Bell Peppers- 1 Cup
Mixed Beans + Sweet Corn- 2 Cups
Rice- 1.5 Cups
Chilli Powder- 1/2 tsp
Chilli Flakes- 1/2 tsp
Cumin Powder- 1/2 tbsp
Oregano- 1/2 tsp
Parsley- 1/2 tsp
Black Pepper- 1/4 tsp
Salt- To Taste
Mint Leaves- 2 to 3
Cilantro- Handful
Water- 2 Cups
