Modern Day Fox Instant Pot Breakfast Porridge (Vegan, Paleo, Grain-free)



You’ve probably heard of the Instant Pot ¯\_(ツ)_/¯


But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!


You asked for more plant based Instant Pot recipes and I’m serving one up this morning! This video is for a vegan, Paleo, whole food plant based (WFPB) Breakfast Porridge very similar to oatmeal without the oats (because they hurt my belly)!

MODERN DAY FOX BREAKFAST PORRIDGE
(Paleo, Vegan, WFPB, Grain-free)

Soak one cup raw nuts overnight.

Peel, chop and cube two cups butternut squash and two small apples.

*TIP* If you microwave your squash before peeling for about 4 minutes, you will save yourself a lot of blisters and curse words!

Drain your soaked nuts and rinse them. Add to high powered blended and make a grainy nut flour.

Add squash, apples and nut flour to inner liner pot.

Add one tsp cinnamon.

Add two TBSP coconut sugar. Maple syrup works as a sub or brown sugar if you aren’t concerned about highly processed sugar.

If you’d love, soak a date in hot water for ten minutes. Pit and chop it and add it to the pot. Raisins work too!

Add one cup canned coconut milk (shake can well before opening).

Add 1/4 cup almond milk.

Add a pinch of salt.

Stir well and put pot into IP.

Replace lid and set valve to sealing.

Set pot for 20 min high pressure and use a fast release.

Remove lid and stir, breaking up chunks of squash and apples until the consistency is more love oatmeal.

Serve in a bowl and add desired topping love coconut, raisins or nuts. We stirred in natural peanut butter and it was awesome!
