MOIST & delicious Banana Bread Instant Pot

You’ve probably heard of the Instant Pot ¯\_(ツ)_/¯

But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!

I love HOME MADE BREAD! My favorite bread to make is banana bread and the instant pot makes it so simple. This banana bread instant pot recipe is incredible!

4 banana (2 ripe, 2 semi ripe)
½ cup butter, softened
¾ cup granulated sugar
3 tablespoons light brown sugar
3 eggs
1 teaspoon vanilla extract
¼ cup sour cream
2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
½ teaspoon salt
2 cups walnuts, chopped (set aside ½ cup for topping)
1 ½ cups water

*In a big mixing bowl, mash the four bananas (I love big chunks).
*Mix in butter, granulated sugar and brown sugar.
*Add eggs one at a time, add vanilla and sour cream and stir to combine.
*Add flour, baking soda, baking powder and cinnamon mix together but don’t over stir.
*Add 1 ½ cups of walnuts (or pecans).
*Spray a 7×3 pan with cooking spray and layer the bottom with parchment paper, then butter the bottom and sides.
*Pour in mixture and top with remaining ½ cup walnuts.
*Cover the pan with foil and slightly tent the top to allow the cake to rise.
*Add the water to the silver lining pot of the instant pot.
*put the pan on the trivet. put the trivet and cake in the instant pot.
*Lock the lid and turn the pressure valve to seal.
*Select high pressure for 90 minutes. Natural release for 10 minutes. *Release remaining pressure and remove the banana bread.
*Let cool slightly before removing the banana bread.
*Serve warm or at room temperature.
*You can also freeze for meal prepping or for when company pops in.
