No-bake Caramel Pecan Cheesecake | | Gluten Free | Thanksgiving Dessert | Christmas Dessert

You’ve probably heard of the Instant Pot ¯\_(ツ)_/¯

But these simple & easy to follow recipes work with any pressure cooker! All pressure cookers work on the same, simple principle: Steam pressure.

Within the sealed pot, the steam builds up therein to a very high pressure, which helps food cook much faster than other traditional methods, such as with crock pots and or ovens!

This No-bake Caramel Pecan Cheesecake is also gluten free! It’s the perfect dessert to stop a big thanksgiving meal. It’s light, not too sweeet and so simple to make~


½ cup (45g) pecans
½ cup (45g) almond meal
1 Tbs brown sugar
1 tsp salt
1 tsp sesame seeds
1.5 Tbs cold butter, cut into cubes
1.5 Tbs melted butter

2.5 tsp gelatine
4 Tbs water
8oz (225g) cream cheese
4Tbs Caramel (divided)
1 Tbs lemon juice
⅓ cup (75ml) milk
½ tsp vanilla extract
⅔ cup (150ml) heavy whipping cream
Candied pecans for decoration
More caramel for drizzling
